Broccoli salad is perfect any time of year. It’s a great side dish or even a meal in itself!
We lightened this up and made it healthier by using Greek yogurt in place of mayonnaise, swapping dried fruit with whole fruit, and using a sugar substitute instead of sugar.
To toast the pumpkin seeds, place them in a small pan over medium heat. Cook, tossing constantly, for about two minutes or until fragrant. Watch them closely, and immediately remove them from the pan to stop the cooking.
Some delicious and colorful add-ins or substitutions would be blueberries, grapes, shredded carrot, sliced almonds, sunflower seed, or sharp cheddar cheese cubes.
How to make this Lightened Up Broccoli Salad with Bacon
Salad Ingredients
- 4 cups broccoli florets
- 1 cup cooked, chopped bacon
- 1/2 cup frozen peas, thawed
- 1 sweet red apple, chopped
- 1/4 cup red onion, thinly sliced
- 1 green onion, sliced
- 1/4 cup pumpkin seeds, toasted
Dressing Ingredients
- 7 ounces plain Greek yogurt
- 2 tablespoons apple cider vinegar
- 2 teaspoons Dijon mustard
- 2 packets of Truvia or any sugar substitute
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
Add the dressing ingredients to a small bowl and whisk until smooth.
Add the salad ingredients to a large bowl and stir to combine.
Pour the dressing over the salad and stir until thoroughly combined.
Serve immediately or chill before serving
If desired, garnish with extra pumpkin seeds, bacon, and green onion.
Special note: Be sure to choose a sweet apple. We like Fuji or Honeycrisp.
